Festive clementine & cranberry muffins

Today I have made the most of my Christmas Oddbox delivery and used some of the clementines and fresh cranberries to make some festive muffins.

You could make at least 15 muffins from these ingredients. My scales aren't working so I have used measurements in cups.


You will need:

  • 1 cup cranberries chopped

  • 2 clementines peeled and chopped

  • 1 1/2 cup flour

  • 3/4 cup golden caster sugar

  • 1/2 teaspoon salt

  • 1 tablespoon baking powder

  • 1 tablespoon of chai latte powder (you could choose cinnamon or another festive spice)

  • 1 egg

  • 1 cup milk

  • 1/3 cup oil

  • Large muffin cases

  • Vanilla extract

Instructions

  • Preheat your oven to 190 degrees and add the muffin cases to a baking tray.

  • In a bowl mix together the flour, sugar, salt, spices and baking powder.

  • Chop the cranberries in half, cut the clementine segments into quarters, add them to a bowl and add a splash of vanilla extract.

  • In another bowl combine the egg, milk, and oil. Add to the flour mixture and fruit and stir together to form a wet mixture.

  • Fill the muffin cases 3/4 full.

Bake in the preheated oven for 20 minutes. Allow to cool and decorate if you wish, you could dust with icing sugar and grate with a little orange or lemon zest.

The cranberry and leaf are for decoration only raw cranberries are incredibly sour.

These muffins are lovely and moist and smell delicious. The kids have already eaten 4 and they've not long been out of the oven.
